A healthy alternative to fries

A way to make olive oil fries without the hassle.

Deep frying done right requires maintaining the hottest temperature before the oil smokes. Olive oil has a low smoke point but can be used safely if you are willing to maintain a constant distribution of your frying vegetables. This means timing placement and removal of your vegetables as they cook. You need to watch carefully, replacing with raw vegetable pieces immediately after pulling out the crispy ones. What a hassel! Instead put olive oil, your favorite seasoning and veggie slices into a bowl and toss the vegetables until they are lightly coat.

Place the seasoned slices out one layer thick onto a parchment covered cookie sheet and bake. See recipe below.

Deep frying in polyunsaturated oils is like cooking in poison. You are eating oxidized nut and seed oils which cause free radical damage to your blood vessels and gum up your gall bladder and cause zits

Mock fries are just as satisfying and savory as deep fried and easier to make.


Recipe

Slice sweet potato, parsnips, russet potato, carrot, zucchini into even sized slices. Toss in a bowl with small amount of olive oil or coconut oil. (Alternative: season with a teaspoon of provencal, rosemary or parsley). Bake at 400º for 40 minutes or until carmelized and sizzling. Roll portions into 6-inch squares of white parchment paper to serve warm. Sprinkle with seas salt.
